The team behind local favorite Trust Restaurant opened their new hangout Hundred Proof on Tuesday, June 27. Located just up the street from Trust in the vibrant University Heights neighborhood of San Diego, Hundred Proof will feature a menu of cocktails and casual fare that redefines what a bar can be.
“Every great neighborhood deserves a great gathering spot, a bar that’s all its own,” said partner Steve Schwob. “We envisioned Hundred Proof to feel like a familiar favorite but with a menu and atmosphere that stands out.”
Boilermakers Take Center Stage
With the bar focused concept, it is only natural that the menu gives top billing to its drinks. That leads off with shots paired with beer chasers known as boilermakers, including a signature list of the owners’ top pairings. Creative libations by Juan Sanchez feature variations on classics and slushy cocktails.
The menu pushes the envelope further by reimagining bottle service without the snootiness: one option teams a six-pack of Miller High Life 7oz ‘stubbies’ with a 375ml of Makers Mark Bourbon. For those who want the best of all worlds, boozy milkshakes served with a side of house-baked donuts can be the start to, or bookend of, a great gathering.
Not Your Father’s Bar Food
Work your way down the menu and you’ll quickly see that Hundred Proof’s food menu features dishes presented in partner and Executive Chef Brad Wise’s signature straightforward style.
“This is the kind of uncomplicated bar food we all like to eat on our days off,” said Wise, a New Jersey native who has been working in restaurant kitchens since the age of 12. “The difference is in the execution. Everything on the menu is made in house and the interpretation is a little unexpected. Our goal is to serve bar food made better.”
From the all-day menu, diners can decide between duck confit poutine, crispy chicken oysters, baked crab dip, and more. Or, they can order them all to share and still have room for a wood stone pizza or the soon-to-be-favorite burger on a branded, house-made bun. Weekday lunch will be augmented with daily chalkboard salad and sandwich specials. Topped off with a banana split for four, the sweet-tooth satisfying creation of pastry chef Jeremy Harville, the evening won’t soon be forgotten.
Sunday brunch details are still in the works but will lean more savory than sweet – the perfect antidote to a late Saturday night.

Designed by local firm JEL Design, Hundred Proof is built for guests to kick back and stay awhile. Raw woods and metals mean it feels classic and no-fuss, and the variety of seating options (indoor, outdoor, pub tables, plush booths) means it’s the perfect spot to go with friends or for events—even if you are rolling with a group of 120.
It is designed to be a place you want hang out in all day and long into the night when the lights dim and the music turns up and stays until close. Stop in and experience it for yourself.
